Cavalieri LAZARIDI refers to the title of Cavaliere that has been awarded to Nico Lazaridi’s family members, in recognition of their contribution to the Italian Republic.
The combination of three famous varieties, the cosmopolitan Sauvignon Blanc with the Mediterranean Ugni Blanc and the Greek Assyrtiko creates an excellent white wine that highlights the local terroir.
TECHNICAL CHARACTERISTICS
Type of wine: Dry White Wine.
Appellation: Protected Geographical Indication Agora.
Varietals: Assyrtiko 70%, Sauvignon blanc 15%, Ugni Blanc 15%
Vinification Method: White vinification with skin contact method at 8-12οC. Alcoholic fermentation in graduated temperatures from 12 to 17οC in stainless steel tanks. Assyrtikois fermented with indigenous yeasts, highlighting the local terroir. Small part of the Assyrtiko ends its fermentation in acacia barrels and stays there for 6 months by performing the battonage. The rest of the wine stays on fine lees with occasional stirring in stainless tanks.

Tasting Notes: It has a pale yellow green colour with fresh aromas of pineapple, grapefruit and peach that are combined in harmony with the sweet hints of jasmine, aromas that reveal the short maturation in acacia barrels. As the wine evolves its aromatic pallet reminiscent of the mineral character of the Assyrtiko. It is round in the mouth with fresh acidity that predisposes you its long lasting aftertaste and its unique evolution.
Aging: Will respond to aging for up to 4-5 years after harvest.
Perfect Pairing: Served chilled at 8-12ΟC, an excellent match for fresh vegetables, fish and seafood with acid sauces, mushrooms, white meat like pork and poultry, hummus and sushi.
